Tasting Notes The most ballanced and delightful wine of this type we have produced. The beautiful deep garnet color is matched by the distinctive Syrah nose. Fruit forward was a descriptor invented for this wine with the Syrah components enhanced by the additions of the two white wines. As you have come to expect, a marvelous mid-palate and mouthfeel followed by a lingering finish. This wine is substantial enough for many evening meals but excells with a summer bruch or lunch. Pairing with Salmon, either hot or cold works well and this is particularlly true if accompanied by an aoli or other mayonnaise based sauce. Our favorites are Eggs Benedict or a really good BLT.
Winemaking Notes Once again, Carole's favorite. Freerun juice taken off the Syrah must about 1 hour after crushing; deep in color more intense than any previous year. Fermented with indigenous yeast in two year old french oak, both the initial and secondary fermentations completed as planned, without incident. The primary fermentation was terminated with a residual sugar of only 1.88 g/l. The intense color and the low residual sugar prompted us to blend in about 2% of our 2006 Sauvingnon blanc and a very small amount of a neighbor's Gewurtraminer to produce a wine of brilliant color and excellent flavor profile.
