Tasting Notes A true expression of the Silver Pines terroir; brilliant garnet color, intense fruitfilled nose raise expectations that will not be disappointed. First flavors of the pinot noir fruit followed quickly by a complexity of cherry and currant mixed with a minerality that is characteristic of our volcanic soil. A full soft mid-palate that blends seamlessly into a firmness as the tannins come into play. A delightful, lingering finish complete the experience. Once again, our winemakers David and Greg have brought out the elegance that only the finest fruit can create. While absolutly drinkable now, this wine will gain in complexity and continue to soften in mouthfeel over the next five to seven years and will be a significant contribution to any wine collection for the next twenty years.
Winemaking Notes 2005 was a challenging year for Pinot Noir. The hillside position of the vineyards along with the daily temperature changes creates significant annual variation in crop development . This third crop from our site produced smaller berries with greater flavor intensity than prior crops. Some of this was the result of slight but significant changes in pruning and leaf control early in the bunch development. Canopy management in August and September along with occasional very limited irrigation delayed the harvest until October 1 when 2.61 tons of Pommard were brought in during very early morning picking followed on October 8 when 3.59 tons of UCD 23 were harvested. Each of these lots were hand sorted and then cold soaked for 5 days. Fermentation with indigenous yeast proceeded without incident and the wine was then moved to barrels where over the course of the next 6 weeks, the secondary fermentation went to completion. Bottling was completed January 30, 2007 and the wine released to the public May 7, 2007 in New York at the Lauber Imports Grand Annual Tasting event.
