Tasting Notes

If you liked the 2003, you are in for a real treat. While slightly less intense in nose, there is still the wonderful citrus smell of fresh squeezed grapefruit along with spring flowers and grasses. The color is lovely, retaining the intensity that we saw in 2003. The taste description we leave to you. So many different opinions about the component flavors confuse the issue: the wine tastes fabulous and we look forward to receiving your comments. While there have already been a broad range of suggestions as to the flavor components, every taster has agreed that it is complex and bursting with true Sauvignon Blanc fruit. It fills the mouth with delight leading to an extraordinary mid-palate mouth feel and finishing with a satisfying long diminuendo. Indeed, it is much like the final echoes of a great musical treat. We hope it brings you as much pleasure as it has given us.

Winemaking Notes
8.7 tons harvested on September 1, 2004. Clone 7 and Clone Musque in nearly equal amounts. The two clones were harvested and remained separate throught fermentaion. The Clone 7 juice was fermented in four year old neutral oak using VL-3 yeast and taken through a partial secondary fermentation. The Clone Musquet was fermented in stainless steel using VL-1 yeast. The ML fermentaion was arrested at one third completion. The two batches were then blended and kept in stainless steel until the fining trials in late February 2005. Bottling was completed on March 5th and the wine released in early April, 2005.
